Spiced Nutty Bananas (African) October 20, 2010

This baked banana dessert from central Africa couldn’t be simpler. The nutty crust contrasts beautifully with the creamy banana beneath, and the rum sauce is delicious.

Serves Three


  • 3 ripe, but firm, bananas
  • 2 tbsp chopped unsalted cashew nuts
  • 2 tbsp chopped unsalted peanuts
  • 2 tbsp desiccated coconut
  • ½-1 tbsp demerara (raw) sugar
  • 1 tsp ground cinnamon
  • ½ tsp freshly grated nutmeg
  • 2/3 cup orange juice
  • 4 tbsp rum
  • 1 tbsp butter or margarine
  • Double heavy cream to serve


  1. Preheat the oven to 200 deg Celsius. Slice the bananas and place them in a greased, shallow ovenproof dish
  2. Mix together the cashew nuts, peanuts, coconut, sugar, cinnamon and nutmeg in a small bowl
  3. Pour the orange juice and rum over the bananas and then sprinkle the nut and sugar mixture over the top
  4. Dot the top with butter, then bake in the over for 15 to 20 minutes, until the bananas are golden and the sauce is bubbly. Serve with double cream.
