Beef Cigars (Cardamom) April 12, 2011

Ingredients

  • 1pkt filo pastry
  • 500gm beef mince
  • 1 brown onion
  • parsley
  • garam masala
  • black pepper
  • ground ginger
  • pomegranate molasses

Method

  • I finely diced the onion and fried it with the spices (didn’t measure just shook them into the pan – there was at least 1tsp garam masala). Then I added the meat and a bit more garam masala and a big slurp of the pomegranate molasses. Cooked for 10-15mins then turned off and stirred through about 1/4 cup chopped parsley.
  • Once the mixture was cool-ish (I waited about 10-15mins) I then rolled it up in the filo pastry and baked in the oven for about 15mins at 180degrees.
  • I cut each square of filo pastry into 3 even strips and then layered them on top of each other with a spray of olive oil between the three pieces and put about 2tsps of mixture on the short edge before rolling up into the ‘cigars’. I made sure the ‘seam’ was underneath when I cooked them. There was no brushing the pastry with egg or any of that nonsense.
  • There were lots of recipe variations on the web – pine nuts, raisins, cumin etc they all sound yummy. One recipe also suggested using spring roll wrappers instead of filo.
