Beetroot and Carrot Salad (Cardamom) May 7, 2011

This fresh salad was served with main course as part of the Cardamom dinner.


  • 1 medium/large beetroot
  • 3 medium carrots
  • 1/4 cup mint, chopped
  • ¼ cup parsley, chopped
  • juice of ½ lemon
  • Olive oil
  • pepper


  1. Peel and grate beetroot and carrot (I use a food processor).
  2. Mix all ingredients in a bowl and serve.

This makes a lovely colourful salad, you can also remove the mint and add cumin for a slightly different flavour.
