Cheesy Cornflake Pancakes with Avocado Salsa and Bacon (Cornflakes) December 7, 2012

Cornflakes Theme - Jacinta's Main (1 of 2)This was the main savoury dish of the Cornflakes dinner.

The recipe for the pancakes is from Fuss Free Cooking. I tripled the recipe for 5 people (it was our main meal) and although I had leftovers, I don’t think doubling it would have been enough.

You will also need 2 rashers of bacon per person fried until crisp and some extra cornflakes.

Ingredients – Salsa

  • 1 large avocado
  • 2-3 medium tomatoes or 1/2 punnet cherry tomatoes
  • approx 1 tsp red onion finely chopped
  • 1/2 tin corn kernels
  • lemon juice
  • dash of olive oil
  • black pepper

Method – Salsa

  1. Roughly chop avocado and tomatoes.
  2. Place in bowl with tinned corn and mix. Add lemon juice, olive oil and black pepper.
  3. Stir to combine.

This salsa is very flexible and is just as delicious with more or less corn, avocado, or tomato so just use what you have and increase or decrease quantities as required.

Method – Pancakes

  1. Place pancakes on a plate.
  2. Top with a couple of spoonfuls of the avocado salsa.
  3. Place two rashers of bacon on top and then scatter with cornflakes.
