Strawberry Santas (Christmas Carols) December 7, 2012

Christmas Carol Theme - Andrew (1 of 3)This was one of the Christmas Carols themed treats.

Ingredients

  • 300mL thickened cream
  • 3 tablespoons icing sugar
  • 1/4 teaspoon vanilla extract
  • 750g large strawberries
  • black sesame seeds

This is actually heaps of cream, so perhaps the extra can be used for another recipe. Pavlovas are nice around Christmas-time…

Method

  1. Pour the cream into a bowl, sift the icing sugar into it, and add the vanilla extract. Then whip til soft peaks form.
  2. The cream can be stored in an airtight container in the fridge for a day or two until ready to use.
  3. Wash and dry the strawberries, then cut the strawberries at the thick end to make nice cone-shapes. Discard the leafy bit.
  4. Cut each strawberry about 1cm from the pointy end to make the caps, and arrange the strawberries around a plate.
  5. Put the cream into a piping bag and pipe the cream under each cap (one edge of the cap will touch the rest of the strawberry, and the rest will be propped up by the cream), and pipe a small dob of cream onto the top of the cap and two-to-three more dobs down the front of the strawberries to make buttons.
  6. Carefully place two sesame seeds onto the “face” of each santa.
