April Fools Theme - Kerri's Main (1 of 2)This was a dish from the April Fool dinner.

Layered potato torte

This recipe from EatingWell was ready about an hour ahead so the oven was free for the other recipes. It stayed warm and I think the sitting time made it firm up a little, making cutting and serving quite neat.

Mustard ice cream

This recipe from ‘Heston Blumenthal at Home’, page 288 (also available here) was easy but made far too much – about 2 litres, when I really only needed about 500ml. I used a Cuisineart ice-cream maker which handled the job really well. I didn’t bother to blend the ice cream with a stick blender halfway through the freezing as the recipe directed, as the ice cream was already quite smooth. Seemed like an unnecessary step that would just take up time and create more dishes!
