Meatloaf Cupcakes (April Fool) April 21, 2013

April Fools Theme - Kerri's Main (1 of 2)The Meatloaf Cupcakes were for the April Fool dinner.

Meatloaf

The meatloaf recipe was from taste.com.au with some small variations:

  • I used the same Beerenberg sauce I used for the cupcake topping instead of the tomato and BBQ sauce.
  • I also left out the cheese and tomato topping.
  • I formed the meatloaf into patties about 1/2 capacity and put them in cupcake cases inside a large muffin tray. They were cooked for about 20 minutes in a moderate oven.

Mashed potato ‘icing’

I thoroughly mashed potatoes, with lots of butter and cream, then put into a piping bag with a large star tip and piped on top of the cooked meatloafs.

Caramel sauce

Beerenberg Smoky bourbon sauce & marinade (from a bottle). This stuff is delicious! Drizzled over the mashed potato meatloaf topping just before serving.
